The preparation involves boiling the legumes and greens together, then adding the noodles toward the end of cooking to achieve a thick and comforting consistency. Ash Reshte is often garnished with fried onions and a drizzle of whey or yogurt before serving, and it’s commonly enjoyed during colder months, particularly in winter.
